THOUGHT OF THE DAY
clean space = clear mind

One thing that has followed me since I moved out of my parents’ house is cleaning and especially organization. For me personally, I feel way better and more clear-minded. I don’t know if others feel the same, but for me it works very well, and that’s one of the reasons I keep most of my spaces clean and organized. Even if my girlfriend is the opposite.

Takeaway: You don’t need to be ‘perfect’ at home but keeping it clean will calm your mind.

Dinner for today
🍔Buffalo Chicken Burgers with whipped feta spread

Time: 30 minutes
Servings: 4-5 servings
Style: Fast default dinner

🧾 Ingredients

  • Lettuce

  • Buns

  • hot sauce ( at least 1 cup leftover )

  • 1 lb. ground chicken

  • ½ cup panko breadcrumbs

  • ½ teaspoons garlic powder

  • ½ teaspoons salt

  • 6 ounce feta cheese (block or crumbles)

  • 4 ounce cream cheese

  • ¼ cup Greek yogurt

  • 2 tbsp olive oil

  • 2 tbsp water

  • 2 tbsp melted butter

👩‍🍳 Instructions

1. Make the whipped feta
Put following ingredients in a food processor / mixer: 6 ounce feta cheese, 4 ounce cream cheese, ¼ cup Greek yogurt, 2 tablespoons olive oil and 2 tablespoons water.

Blend all the ingredients together until it incorporates into a thick and spreadable texture with flecks of feta. After its done put it aside.

2. Mix the burgers
In a medium Bowl mix the following ingredients:

1 lb. ground chicken, ½ cup panko breadcrumbs, 1/3 cup hot sauce, ½ teaspoons garlic powder, ½ teaspoons salt

Form into 4-5 patties.

3. Cook the burgers and preheat the oven
Heat a small bit of oil in a large nonstick skillet over medium high heat. Add patties and cook for 3-4 minutes per side, until golden brown and the inside of the patties is fully cooked.

While you are at your 3thd burger, preheat the oven at 170 Fahrenheit and put in the buns. Be careful to take them out after they are crispy. This takes around 5-12 minutes.

4. Make your mixture and brush the patties
Melt 2 tablespoon of butter and mix it with 2 tablespoon of hot sauce. Stir it well and brush the patties with this mixture after they are cooked.

5. Finish
Arrange your burgers on buns (which are crispy on the outside) with lettuce and a shmear of the whipped feta.
