MEAL OF THE DAY
🧑‍🍳15-minute garlic olive oil pasta

Time: 15 minutes
Servings: 2
Style: Fast default dinner

🧾 Ingredients

  • 200g spaghetti

  • 3 - 4 garlic cloves

  • 4 tbsp olive oil

  • Chili flakes (optional)

  • Salt

  • Pasta water (reserved)

  • some cheese (if you like it because I LOVE it)

👩‍🍳 Instructions

1. Cook the pasta
Bring salted water to a boil and cook spaghetti until al dente (they are NOT supposed to be hard anymore).
Before draining, reserve ½ cup of pasta water (because of the flavor it has).

2. Slice the garlic
Thinly slice the garlic - don’t mince (there are a lot different tastes).
This gives you a softer, less bitter flavor.

3. Infuse the oil
Heat olive oil on low-medium.
Add garlic and gently cook until lightly golden.
Do not burn.

4. Add chili flakes (optional)
A small pinch is enough.
Let it bloom in the oil for 20 -30 seconds.

5. Combine everything
Add drained pasta directly into the pan.
Pour in a splash of pasta water.

Toss until glossy and lightly creamy.

6. Finish with salt
Taste and adjust.

That’s it.
