MEAL OF THE DAY
🧑🍳15-minute garlic olive oil pasta

Time: 15 minutes
Servings: 2
Style: Fast default dinner
🧾 Ingredients
200g spaghetti
3 - 4 garlic cloves
4 tbsp olive oil
Chili flakes (optional)
Salt
Pasta water (reserved)
some cheese (if you like it because I LOVE it)
👩🍳 Instructions
1. Cook the pasta
Bring salted water to a boil and cook spaghetti until al dente (they are NOT supposed to be hard anymore).
Before draining, reserve ½ cup of pasta water (because of the flavor it has).
2. Slice the garlic
Thinly slice the garlic - don’t mince (there are a lot different tastes).
This gives you a softer, less bitter flavor.
3. Infuse the oil
Heat olive oil on low-medium.
Add garlic and gently cook until lightly golden.
Do not burn.
4. Add chili flakes (optional)
A small pinch is enough.
Let it bloom in the oil for 20 -30 seconds.
5. Combine everything
Add drained pasta directly into the pan.
Pour in a splash of pasta water.
Toss until glossy and lightly creamy.
6. Finish with salt
Taste and adjust.
That’s it.
THOUGHT OF THE DAY
The 5 Meal Rule
Most people don’t need more recipes. They need fewer decisions.
A simple shift: Have 5 meals you can cook half-asleep.
Not extravagant. Just simple but reliable meals.
Once you have them, groceries get easier. And food get quieter.
Takeaway: Less recipes and more focus on the important.

CULINARY FACT OF THE DAY
Why simple food exists everywhere
Almost every food culture has a version of “default meals”.
Cacio e pepe in Italy.
Rice and eggs in Asia.
Bread and spreads across Europe. (ok there are way more)
Different ingredients.
Same philosophy: Meals that work on ordinary days.
Takeaway: The best food traditions are built on repeatability.
