Easter is over and I look forward to start working again
It’s always a bit of a mixed feeling when I don’t have to work. On the one hand, I enjoy not thinking about anything work-related. On the other hand, I don’t like the feeling of being unproductive. But sometimes you need to recharge your energy to maintain a high level of productivity.

Dinner for today
🍳 Sweet Potato Hash

Time: 35 minutes
Servings: 2-3
Style: Light default dinner
🛒 Ingredients
2 medium sweet potatoes (cut into small cubes)
1 red onion (thinly sliced)
2 cloves garlic (thinly sliced, not minced)
1 poblano pepper (or bell pepper)
1 handful kale (roughly chopped)
2–4 eggs
1–2 tbsp olive oil
1 tsp chili powder
Salt & pepper
Optional toppings:
Avocado, lime juice, cilantro, hot sauce

👨🍳 Instructions
1. Start with the sweet potatoes
Heat a large pan over medium heat with olive oil. Add your diced sweet potatoes and let them cook without touching them too much at first. This is important! You want them to develop that golden crispy edge. Stir occasionally after a few minutes and cook until they’re soft inside and slightly crispy outside.
2. Add the flavor base
Throw in the sliced onion and pepper. Cook for about 4 minutes until everything softens. Then add the garlic and chili powder. Keep stirring so the garlic doesn’t burn but still gets slightly golden.
3. Bring in the greens
Add the kale and a pinch of salt. Let it wilt down into the pan. It should only take a minute or two.
4. Crack in the eggs
Make small spaces in the pan and crack the eggs directly into it. Cover with a lid and let them cook until the whites are set but the yolks are still soft (or however you like them).
5. Finish it properly
Take it off the heat and top with avocado, lime juice, cilantro or hot sauce.
